Dorcas Reilly, the inventor of green bean casserole considered the “mother of all comfort foods,” died on October 15.
She was 92 years old. Her easily adaptable six-ingredient recipe of green beans, Campbell’s cream of mushroom soup, soy sauce, black pepper and French-fried onions takes 10 minutes to prepare and 30 minutes to bake. More than 60 years since the dish was invented, green bean casserole is a Thanksgiving staple, with more than 20 million households serving it this year. Campbell’s has estimated that 40 percent of its Cream of Mushroom soup sold in the United States is used in making Mrs. Reilly’s green bean casserole.
